What You’ll Lead

• Full ownership of implementing and monitoring the American beef cutting scheme (NAMP/USDA‑aligned) at the production site.
• Practical leadership of trimmers and deboners: training, skill assessments, and progress tracking to ensure consistent, high‑quality output.
• Creation and maintenance of process standards: SOPs, instructions, maps, and checklists that turn best practices into muscle memory.
• Yield intelligence: track weight standards, grading, and non‑conforming rates; analyze deviations and lead corrective actions with measurable results.
• Time and output benchmarking: help define realistic norms and support continuous improvement through data and timing studies.
• Compliance and safety: uphold sanitary, safety, and hygiene standards without slowing down the flow.
• Cross‑functional alignment: connect quality, veterinary, production, logistics, and procurement so standards stay consistent fr om carcass to customer.

Who We’re Seeking

• 5+ years of hands‑on beef deboning/trimming experience, with at least 3 years applying the American scheme (NAMP) in a real production environment.
• Deep knowledge of USDA yield grades and export requirements; ability to align them with Russian standards (TU, STO, GOST) and EAEU Technical Regulations (CU TR).
• Proven experience with weight accounting, бракераж (quality rejection), defect photo documentation, and process standardization.
• Understanding of how raw material quality (half‑carcasses/quarters) affects yields, grading, and losses — and how to adapt tactics accordingly.
• Expert handling of professional tools (knives, band saws) plus solid knowledge of sharpening, maintenance, and safety protocols.
• A teacher at heart: experience developing training programs, delivering practical instruction, and evaluating skills.
• Data‑driven mindset: ability to set, track, and report on KPIs for yield, losses, and quality metrics.
• Change leadership: history of introducing new schemes, overcoming resistance, and ensuring smooth adoption on the shop floor.
